The term Mosaic Knitting is a term that describes a way of using two colors, or more, yet never carrying more than one color at a time. There are no long floats on the back side as in Fair Isle knitting or struggling to carry two yarns at a time. Mosaic knitting is a great technique for beginners to add color to their knitting without worrying about the gauge changing when the colors change, as in some other types of color work. If you can knit, purl and slip stitches, you can do Mosaic knitting.
